Description

This elegant Honey Lavender Ice Cream is smooth, floral, and naturally sweetened with honey a refreshing gourmet treat perfect for warm days or special occasions.


Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup honey
  • 2 tbsp dried culinary lavender
  • 5 large egg yolks
  • 1/4 tsp vanilla extract

Instructions

  1. Combine cream and milk in saucepan. Add lavender and heat until just simmering.
  2. Remove from heat and steep for 20 minutes. Strain out lavender.
  3. Whisk egg yolks and honey until smooth and pale.
  4. Slowly add warm cream mixture to yolks while whisking (tempering).
  5. Return mixture to saucepan and cook over medium heat until thickened.
  6. Remove from heat, stir in vanilla, and chill for at least 4 hours.
  7. Churn in ice cream maker until creamy.
  8. Freeze in airtight container for at least 2 hours before serving.

Notes

  • Use only culinary-grade lavender.
  • For lighter sweetness, use clover or acacia honey.
  • Store in a freezer-safe container for up to 2 weeks.
